MICHELIN Guide’s Point Of View

Not many restaurants in Seoul offer diners an authentic taste of Japanese-style tempura omakase. Using the freshest seasonal ingredients, Chef Choi Ji-young strives to bring diners a taste of the season's best offerings, enveloped in a delicate batter and deep-fried to a crisp. Upon entering this restaurant, note the wooden tray showcasing the day's ingredients. Because tempura is such a delicate dish, the chef must have an in-depth understanding of all the ingredients as well as the frying technique. Sit at the counter and watch the chefs quietly fry up the day's offerings in a large copper pot.
