Tucked away in an unexpected and narrow alley in Cheongdam-dong, this culinary retreat is helmed by Chef Kim Hyeong-jun. His meatball kushiage embodies the shape of a black truffle. Sichuan-style, deep-fried freshwater crayfish and other signature dishes also epitomize the chef’s passion for creating kushiage with a modern twist. Everything about this restaurant bears the mark of meticulous care: See the ice-filled counter placed right in front of the chef’s workspace, which regulates the temperature of chilled drinks. Kushiage Jin only offers an omakase dinner.
