MICHELIN Guide’s Point Of View

Chef Kim Tae-yoon believes that healthy and safe ingredients are the fruit of a healthy relationship between humans and nature. That is why, for him, searching for the best ingredients he can find constitutes a fundamental aspect of cooking. Naturally farmed pork, free-range black goat meat, and his modern interpretation of morkovcha, a spicy carrot salad eaten by the Korean diaspora in Central Asia as a substitute for kimchi, are some of the offerings at Ithaca. Chef Kim's creations are an amalgam of refreshing combinations that push boundaries and surprise the palate.
