Hidden away in the basement of a building in a bustling commercial alley near Sinsa subway station, Hakusi (Japanese for blank paper) is Chef Choi Seong-hun's casual dining bar. From traditional to modern, Choi's expertise lies in Japanese cuisine, having honed his skills in many different parts of the world, including Japan and Hong Kong. As the main man behind Hong Kong’s Tenku RyuGin, Choi knows how to work a Japanese grill. It goes without saying that chargrilled dishes are not to be missed here. The busier the chef in the kitchen, the happier the customers is his motto.
