"Photovoltaic panels provide both the resort and the restaurant with their own independent supply of energy. The same philosophy has resulted in the use of recycled materials in the restaurant, for example in the famous lights which hang above the tables illuminating the chef’s beautiful dishes. In addition to using vegetables grown in its own kitchen garden (where rainwater and compost feed the crops) and its own extra virgin olive oil, the restaurant has established a network of local fish and meat suppliers, with particular attention paid to the use of seasonal produce."
