Daiki Horita creates dishes with ingredients grown in Nara’s great outdoors. What drives him is his love for his home province. The vegetables he gets from farmers add their colour the plates. He approaches the ingredients from beyond the viewpoint of genre, so has honed his sensibilities in Italian, French and Spanish cuisine.
