Unpolished buckwheat is kept in low-temperature storage and stone-milled to make juwari soba. The top recommendation is the ‘Soba Zanmai’. Comparing soba from three different production areas is like ‘soba tasting’. Try it first with salt to experience the natural flavour. The sauce is made with katsuo dashi and seasoned with only a light soy sauce. The lightness of colour and taste is a very Kyoto quality. Sobagaki and sabazushi are the popular shuko.
