This elegant restaurant occupies the first floor of La Gemma hotel, right in the heart of artistic and monumental Florence. For Argentinian chef Paulo Airaudo, this is almost a homecoming as his ancestors were Italian. Responsible for restaurants around the world, this Michelin-starred chef has appointed Olivia Cappelletti and Tommaso Querini as his capable resident chefs here in Florence. Although the choice is limited, the cuisine is exciting, with some truly memorable dishes on the menu. We particularly recommend the tagliolini with goat’s butter, anchovies, Sorrento lemon and Oscietra caviar, the pigeon cappelletti, and the Wagyu beef.
