The huge vats of beer and the remarkable tree immediately catch the eye on entering the Staminée. Continue on into the elegant brasserie, where a trendy playlist and hip décor set the cosmopolitan scene. Veteran chef Stijn Rotthier puts his own spin on classical recipes. Examples include tender, juicy veal loaf with a melt-in-the-mouth millefeuille of potatoes and a madeira sauce subtly perfumed with truffle or a rich vol-au-vent in a hollandaise sauce steeped in spicy, fresh and acidic notes. Fortuin’s culinary signature can be summed up as punchy and authentic.
