MICHELIN Guide’s Point Of View

The Kyoto-trained owner-chef treats his customers to set menus that bring original ideas to traditional dishes. Fragrances and textures are skilfully combined, like lightly sweetened monkfish liver with watermelon pickled in sake lees, and soft steam-fried eggplant with raw uni. The unagi, skin-side fragrantly grilled, with sansho soy sauce is another fine combination. At the end comes seasonal takikomi-gohan.
