MICHELIN Guide’s Point Of View

The owner-chef fell for Aomori Shamrock chicken. Demanding high quality in meat, he uses birds raised in special chicken houses for longer than normal. Because he procures whole chickens, he is able to offer rare parts and very fresh liver. He brings out unique flavours by seasoning different parts with different kinds of salt. Be sure to try delicacies like liver boiled with sansho, and rump meat marinated in sake lees and grilled.
