MICHELIN Guide’s Point Of View

The counter encloses the charcoal grill in a stylish, smokeless environment. Gamecock, Nagoya Cochin and other breeds are used depending on the part. The chicken is brushed with sesame oil and vinegar to create synergy between the umami and flavour of the meat. The speciality is the breast meat grilled with seaweed that comes at the beginning of the set menu. There are also various vegetables, including bamboo shoots, white asparagus, and ginkgo nuts.
