MICHELIN Guide’s Point Of View

The owner-chef seeks to deliver Japanese cuisine that brings a sense of restful contentment. The dashi uses Rausu kombu, there are rice bran pickles, chirimen sansho, and freshly cooked rice. The meal always starts with snacks in the form of a small bowl of something, and tsukuri, which you can enjoy a drink with. The content of the meal is generous, including a grilled or stewed seasonal ingredient, and even rice cooked in an earthenware pot.
