MICHELIN Guide’s Point Of View

The owner-chef grills the chicken in silence, eyeing it keenly and fanning it by hand. He uses mostly chicken from the Kanto area. The skin has a sweetness to it, and the meat is full of flavour. There are also rare parts like the ‘muneko’ meat from between the breast and wings. At the end you can have dishes like chicken on rice, minced chicken over rice, ‘Torikawamabushi’ grilled chicken skin mixed with rice, and inaniwa udon made with chicken soup.
