MICHELIN Guide’s Point Of View

The main focus is on the omakase menu so that customers can enjoy various parts of the chicken. The meal starts off with light-flavoured parts and moves to meatier, more savoury offerings at the end. Interestingly, different kinds of salt are used back and front, filling the mouth with flavour. He’s particularly proud of the skewer with chicken meat balls garnished with chicken yolk sac. Also, try rare parts like the shoulder meat and thymus gland.
