MICHELIN Guide’s Point Of View

The local atmosphere like you’d find in east-end Tokyo and the fact that even in the evening you can order just a bowl of tendon make this an appealing place. The owner-chef learned to identify quality fish at markets. He uses ingredients like Edomae anago, Amakusa prawn and hamo, and young ayu from Lake Biwa. The kakiage is made with shrimp, kobashira and honewort; it’s deep-fried in a blend of freshly pressed sesame oil and refined soybean oil for a light texture.
