MICHELIN Guide’s Point Of View

The chef’s main focus is the combinations of ingredients. For example, springtime clams with ainame, horse meat with beets that are similar in colour, and squid with cauliflower. The creative dishes also make use of traditional techniques. Before taking orders, he provides a menu card and places samples of ingredients in small bottles in front of the customer to clearly explain the content of the dishes and his own approach.
