MICHELIN Guide’s Point Of View

The owner-chef acquired his skills in the Kansai region, and his soba shares the best of both Kansai and Kanto. The cold dipping sauce is Edo-style, with the rich saltiness of kombu and katsuo. The soba in hot broth and the soba in cold broth served in summer are Kansai-style, with a light flavour. He serves two kinds of soba: from finely ground marunuki and coarsely ground hikigurumi-flour. Sobagaki and roast duck hearts are among the large selection of shuko.
