MICHELIN Guide’s Point Of View

The menu is broad so we recommend starting with the assorted tsukuri and sake from the owner-chef’s home prefecture of Hiroshima. The Hiroshima oysters come not only butter-grilled or marinated in oil, but they are also fried and served in dashi or prepared karaage style, which you don’t see much elsewhere. We also recommend dishes like bozushi with pickled Hiroshima Chinese cabbage inside and the ‘Hiroshima Ryoshi Udon’ made with dashi from anago bones.
