MICHELIN Guide’s Point Of View

The chef’s motto is to respect the ingredients and highlight their characteristics without adding unnecessary touches. Another feature here is the use of seasonal Japanese ingredients, such as bamboo shoots and hanasansho in spring and ayu and hamo in summer. The 'Uonuma yairo shiitake tart' created using the local speciality is made with pie crust, shiitake and lard. The items are simple in appearance yet truly refined.
