MICHELIN Guide’s Point Of View

Tatsuya Otake learned originality and thinking outside the box from his mentor in Gifu, who has influenced many chefs. While based on normal Japanese cuisine, the menu has a playfulness to it. The soups and grilled dishes are traditional, but seasonal croquettes are served as the fried dish. In the summer, the speciality is risotto featuring awabi liver and rice. He attracts customers with his unique take on things.
