MICHELIN Guide’s Point Of View

The interior of this restaurant is more like a kappo than a yakitori restaurant owing to the owner-chef’s background in Japanese cuisine. He uses two kinds of local chicken, the Hyogo breed for à la carte items and the Kyoto breed for the yakitori. Based on his experience with Japanese cuisine, he only uses seasonal vegetables and makes full use of Japanese techniques, such as seasoning French quail eggs before they are cooked over kishu-binchotan.
