Kippei’s forte is its pork, aged for maximum umami. If you like rich, dense flavours, the marbled rib roast is recommended. You can ask for extra wasabi, which nicely complements the fat. In the loin, meat and fat are consummately balanced. Tenderloin melts in the mouth, the meat flavoursome. A range of seasonings are available, including salt, tonkatsu sauce, soy sauce and cayenne pepper powder. Enjoy switching the seasonings, one slice at a time.
