MICHELIN Guide’s Point Of View

The chef is an avid follower of Auguste Escoffier and creates new dishes with his own polished sensibilities. One example of this is the Ezo deer consommé in which he takes classic deer poivrade sauce and turns it into a soup. The unembellished dishes are minimalistic and demonstrate the originality of his interpretations.
