The owner-chef says that the true value of Edomae sushi lies in nigiri, and he seeks to achieve a harmony between the topping and vinegared rice. His approach is out-of-the-box and his preparations are meticulous; they include changing how fish are prepared based on their quality and freshness, and carefully setting the temperature of the akazu-seasoned rice. Snacks that display skilled handiwork are incorporated into the set menu to provide an accent.
