MICHELIN Guide’s Point Of View

The owner-chef uses a charcoal flame in an oven to bring out fragrance and flavour. Bamboo shoots and matsutake are chargrilled. The speciality is grilled goma-dofu with ground sesame seeds and Yoshino kudzu. When a katsuo shipment comes in from Kochi, he grills it over straw for a smoky fragrance. Based on his experience at a restaurant that holds up the ideal of ‘the taste of Tosa’, he cooks rice in an earthenware pot with water from the Shimanto River.
