MICHELIN Guide’s Point Of View

The owner of the exclusive kaiseki restaurant, Goryu Kubo, opened this restaurant out of a desire to serve soba and shuko made using Japanese cooking techniques. À la carte dishes include lightly fried soba tofu, seasonal ohitashi, and takiawase. He serves juwari soba for how cleanly it goes down. Made of finely ground buckwheat flour, the strands maintain their square profile despite being cut thin. It also goes well with the rich dashi-based sauce.
