MICHELIN Guide’s Point Of View

The owner-chef places emphasis on the production area of the seafood and offers the best of the season, including Edomae gizzard shad and golden cuttlefish, kasugodai from Izumi and Tsushima anago in the winter. We also recommend the carefully prepared snacks like chargrilled nodoguro and botan shrimp pickled in Chinese Shaoxing rice wine. His thorough pursuit of texture is evident even in the omelette with meringue.
