MICHELIN Guide’s Point Of View

The name is from a phrase used by the old tea ceremony master, Sen no Rikyu, and means ‘unexpected’ or ‘by chance’, reflecting the philosophy that each encounter is to be prized. The chef draws up the menu mindful of how well the dishes will go with sake. The tsukuri is let sit with kombu or marinated in vinegar. At the end come tea ceremony sweets served with usucha. Japanese culture is presented here in an interweaving of cuisine, sake and serving dishes.
