MICHELIN Guide’s Point Of View

The Kansai-style dashi, light in colour, brings out the flavours of the oden ingredients. They use flying fish dashi because it’s what the first-generation owner-chef was used to when he lived in the Setouchi area. Expect a wide range of ingredients, from standard items like daikon, konjac jelly and tofu to more elaborately prepared items. The speciality is whole tomato; when you put your chopsticks into it, the tomato umami and sourness mix with the soup.
