MICHELIN Guide’s Point Of View

The owner-chef went to Europe as both a chef and a designer – he learned Portuguese cuisine while also studying art. He reproduces authentic recipes but seasons the dishes according to Japanese taste preferences. His speciality is bacalhau (dried cod), which he dries in a special dry-ageing chamber in the restaurant.
