MICHELIN Guide’s Point Of View

The female chef’s focus is on bringing out the natural flavours of the ingredients with an approach based on traditional French cuisine. Enjoy seasonal ingredients like white asparagus and firefly squid in spring, awabi and lobster in summer and boar and deer in winter. Prepared using orthodox techniques, the dishes are both beautiful in appearance and delicate in taste. Her speciality is opéra-style foie gras and apple.
