MICHELIN Guide’s Point Of View

You’ll find various dishes here that are a fusion of different cultures as Peruvian cuisine is marked by its diversity, having been influenced by European, Asian and African cuisine. The chef is a third-generation Peruvian of Japanese descent, and he uses both Japanese and Peruvian ingredients. The standard dish is ceviche – marinated fish with a touch of lime sourness. Many dishes are made with potatoes, and the combinations and arrangements are unique.
