MICHELIN Guide’s Point Of View

The chef trained in French cuisine in Japan, then worked in Peru where he learned about the local tastes. The standard items are ceviche, featuring white-fleshed fish marinated in salt and citrus juice, and lomo saltado, featuring fried potatoes topped with meat and vegetables sautéed in Peruvian soy sauce and wine vinegar. We also recommend the weekday-only lunches such as Peru-style beef stew and chicken takikomi-gohan.
