MICHELIN Guide’s Point Of View

The owner-chef trained at a restaurant that follows the traditions of Kansai cuisine. His credo is to bring out natural flavours with no more preparations than are needed. The counter seating is so that his customers can taste the food the moment it’s ready. Following the way of his training, he adds dried tuna to the dashi to give it more umami. Specialities include tender boiled octopus and rice cooked in an earthenware pot topped with tai.
