MICHELIN Guide’s Point Of View
Ulv translates as ‘wolf’ but also rhymes with the Taiwanese word for ‘people’. The young chef here uses Nordic cooking techniques, such as wood-firing, smoking and fermentation to layer complex flavours. Start your meal with kombucha fizz that cleanses the palate and boasts a subtle aroma. Grilled eel is wonderfully smoky, while the pillowy fermented potato bread comes with sour cream and trout roe for a briny tartness. The hygge décor is also a plus.
