MICHELIN Guide’s Point Of View

The main offering is tora fugu, using wild-caught fish from the Bungo Channel. The fish is let sit for several days at low temperature, which reduces moisture content to condense the flavour. Stone-cooked fugu is a famous item that features in every set menu; the tessa is thick-sliced and served ‘tree-peony style’; and the tetchiri with dashi made from fugu head and bones is also recommended. The waitress does the cooking for you at your table.
