MICHELIN Guide’s Point Of View

Various unique items are served in between yakitori. The idea of making minced chicken into a hamburger speaks to Yoshitomo Ishii’s freedom-loving personality. Yakitori, the main dish, features large pieces of free-range female chicken skewered and grilled over charcoal to bring out the flavour. Dishes served at the end include chicken curry and chicken ramen. The diverse dishes are truly the work of a chicken artisan (torisho).
