MICHELIN Guide’s Point Of View

The young owner-chef serves dishes that are based on tradition and the season, but never fails to incorporate his own ideas, too. The takikomi-gohan at the end is made with Maizuru rice from a specific field selected by him. The dashi, fragrant with katsuo-bushi, brings out the flavour of the soup ingredients, and the seasonal hassun is gorgeously presented. His hospitality extends to the finest points, and puts you at ease.

The chef's commitment
We are strengthening ties with rice farmers who use rainfall and river water to grow rice so that traditional methods will continue. We use Koshihikari rice grown in terraced fields set aside for us. Vegetables come from our family home and are grown without burdening the environment.
