MICHELIN Guide’s Point Of View

The owner-chef, whose training followed the Edomae tradition, uses traditional techniques, including pickling, marinating and simmering . White-fleshed fish is prepared kobujime style or salted to bring out the flavour. Creative touches include adding kombu to the vinegar for the gizzard shad and keeping the fragrant grilled skin of the anago facing up. Rich akazu is added to the rice vinegar to bring out the flavours of the ingredients.
