MICHELIN Guide’s Point Of View

The owner-chef serves shuko, using his experience with Japanese cuisine, as well as various sushi. The fish is prepared with much thought given to its characteristics; for example, rice vinegar for medium-sized gizzard shad, but akazu for larger ones. The pieces are smaller so that you can try various items. No effort is spared, with prawn innards used for nigiri, and the rest of the prawn cooked in dashi with sake or mirin and served as a snack.
