MICHELIN Guide’s Point Of View

The restaurant's name is based on the three ‘arrows’ of ‘ingredients, people and gratitude’. The owner's creed is to seek fine ingredients, express the spirit of the suppliers in his cooking, and to be thankful for everything. His experience from working many years in Kyo-ryori and sensibilities from having studied French cuisine in Paris are evident, such as how in theebi-shinjo soup he includes dashi made by boiling shrimp shells.
