MICHELIN Guide’s Point Of View

The enthusiastic owner-chef brings the udon out himself and explains how to eat it. You might like to start with the ‘Kijoyu’ or ‘Kake’. The noodles are from dough that has been rested for several hours, and are cut right before being boiled so they have a wheaten fragrance and supple texture. We recommend the oden, featuring a bold dashi and miso mixed with mustard, and the takikomi-gohan made with 10 ingredients to go with your meal.
