MICHELIN Guide’s Point Of View

The owner-chef’s emphasis is first and foremost on the natural flavours of the ingredients. The dashi is meat-based, with chicken, Berkshire pork, and other meats used for flavour. He seasons the soup with the added flavours of dried and fermented fish, and dried sardines. The standard offerings are soy sauce-flavoured and salt-flavoured Chinese noodles. The wheaten fragrance of the homemade noodles goes well with the soup. He limits the number of ingredients to allow each one to shine and make each bowl of ramen that much more memorable.
