MICHELIN Guide’s Point Of View

Enjoy authentic spicy Chinese cuisine. The chef uses generous amounts of sansho procured in China and red pepper and the spare rib speciality is a perfect example. Fermented black soybeans are added to the refreshing mapo tofu, giving it a robust flavour. The twice-cooked pork with garlic leaves and pork ribs with skin recreates a Sichuan tradition. The tireless chef visits China several times a year to make new discoveries.
