MICHELIN Guide’s Point Of View

The owner-chef was fascinated by the ‘Asador’ style of having a chargrilling station inside the restaurant that he saw in the Basque country. He serves creative dishes based on Basque cuisine, such as wood and chargrilled fish and meat, while incorporating the Japanese sense of season. His speciality is wagyu from Kagoshima. He uses dry-aged meat and cooks it over wood fire for a unique fragrance.
