MICHELIN Guide’s Point Of View

This restaurant was established by the manufacturer of Miwa somen. Letting the noodles rest gives them body, but also increases the acidity. Through a process of trial and error, the third family head went with olive oil instead of cottonseed oil. While made using the traditional hand-stretching method, the noodles have a contemporary feel. The focus here is on attracting a younger clientele for the future, with the restaurant done out like a café, and the use of paper bowls.
