MICHELIN Guide’s Point Of View

Artisan technique is on display in the ultra-fine juwari soba. The owner-chef uses mostly buckwheat flour from Suifu, Ibaraki. He says the unique stickiness makes possible thinner noodles. The dipping sauce has a full-bodied flavour, and is made with katsuo-bushi, kombu, shiitake mushrooms and dried tuna. The speciality is ‘Shrimp Oroshi’. It combines Nara’s pungent daikon with the sakura ebi tempura he learned to make where he trained.
