The prefecture does not border the ocean, so the owner-chef wants to treat his customers to delicious fish all the more. He takes that desire with him when he goes to the Tsuruhashi Market in Osaka. ‘Ibushigin’ refers to the smoke from the charcoal and to ginjo (high-quality) sake . The grilled mackerel with rice cooked in an earthenware pot is a speciality that the owner-chef’s grandmother used to make. The techniques he mastered at a ryotei are on full display.
