MICHELIN Guide’s Point Of View

The owner-chef reworks the combinations of ingredients somewhat, while still following Edomae tradition. For example, he serves two different kinds of shirako (cod and tai) and two different kinds of white-fleshed fish (sillago and small tai) together so that you can compare the tastes. Do try the unfamiliar dishes, like the daikon and enoki mushrooms – they’re fried in a mix of rapeseed oil and sesame oil to bring out their unique character.
